3 chicken breasts, thawed
1/4 cup cranberries
1/2 onion
dab of butter
2 tbsp walnuts chopped
1 slice bacon, crumbled
3 slices Mozzarella cheese
1 tsp. cinnamon
1 tbsp mustard
2 tbsp. fruit jelly
Pound chicken breasts to 1/2 inch thickness. Saute onion in butter, add cranberries, cinnamon, mustard and jelly. Spoon cranberry mixture into center of the chicken breasts, sprinkle 1/2 of the walnuts and bacon on top of cranberries. Roll up chicken and place seam side down in baking dish. Top with a slice of mozzerella cheese and sprinkle with remaining walnut and bacon mixture.
Bake at 350 for 45 minutes. Good with Rice Pilaf.

Ooooh, that sounds really good! And there is no way on earth my dad or brother would eat it! LOL! I want to try it though. ^_^ Sometimes when they are both at work.
A couple of questions:
Is the onion 1/2 cup or 1/2 of an onion, just wasn't sure on that... I figure it's chopped, too?
And, what kind of fruit jelly? Is it pretty much whatever sounds good and I could use whatever I want?

KRISTI yes, 1/2 onion chopped, whatever fruit jelly you have on hand will work I think. I've used apple and raspberry.
